15 – Stewed Chick Peas & Chicken

This is an easy to make stew recipe that is rich in protein, as well as being high in fiber. The flavors blend together so well, from the garlic to the cumin and lemon juice. It tastes great if you serve it over broccoli or couscous, too.

Makes 4 Servings

Cooking + Prep Time: 40 minutes

Ingredients:

3 quartered pitas, whole wheat

1/3 cup of halved apricots, dried

1/4 cup of 2% low fat Greek yogurt

4 x 6-oz. chicken breasts, boneless, skinless

1 sliced bell pepper, small – any color is OK

1 x 15-oz. can of drained, rinsed chick peas

1 x 14-oz. can of tomato sauce, no salt added

1/4 tsp. of cinnamon, ground

1 lg. pinch pepper flakes, red

2 smashed garlic cloves

Salt, kosher

For garnishing: fresh parsley, chopped
